Labels can be added and deleted on the Label Board. If a label is used, the amount of occurances occurrences is shown as well. A label can represent a project (e.g. just an opportunity with Jira project, part of a project), an user (e.g. for skill based planning) or a team (to transfer a teams to Portfolio for Jira*).
